Luscious Lentil Soup

Ingredients

2 tablespoons olive oil
2 cups chopped raw onions
4 coarsely grated raw carrots
1 teaspoon crumbled marjoram
1 teaspoon crumbled thyme
1 (28-ounce) can tomato with juice, coarsely chopped
7 cups (beef, chicken, or vegetable broth )
1 1/2 cups dried lentils, picked over and rinsed
1 salt and pepper to taste
6 ounces dry red wine
1/3 cup chopped fresh parsley
4 ounces Cheddar cheese, grated

Directions:

Heat oil in large saucepan and sauté the onion, carrots, marjoram, and thyme, stirring the vegetables for about 5 minutes. Add tomatoes, broth, and lentils. Bring soup to a boil, reduce the heat, cover pan, and simmer for about 1 hour or until the lentils are tender. Add the salt, pepper, wine, and parsley and simmer the soup for a few minutes. Serve with cheese sprinkled on top.
