In a heavy skillet combine almonds, butter, and sugar. Cook over medium heat, stirring constantly with a wooden spoon until mixture caramelizes (turns golden caramel brown). This process takes approximately 10 minutes. Immediately add vanilla and mix through quickly. Pour onto sheet of heavy duty aluminum foil and spread as thin as possible quickly. Sprinkle lightly with salt. Cool thoroughly. Break into clusters. Store in airtight containers up to 4 months.
If recipe is doubled, the caramelizing process will take approximately 10 minutes longer. Easy. Can do ahead.
