Sauté turkey slices in oil and cut into cubes. Steam asparagus, then cut diagonally into 1-inch pieces. Wash and stem spinach and coarsely chop. When ready to serve, toss all salad ingredients together in a bowl. Pour Mustard Dressing over salad and serve immediately.
Mustard Dressing:
Place mustard in a bowl, gradually whisking in the water until it is thoroughly blended. Slowly beat in oil. Add vinegar and whisk until well combined.
