Scald milk, cream and vanilla bean in heavy saucepan. Combine egg yolks and sugar beat well. Pour some hot milk into eggs blend gradually then add eggs to milk mixture. Return mixture to saucepan and cook until thick, like custard--until mixture coats a spoon. Do not allow to boil or it will curdle. Puree bananas, sour cream and honey in food processor. Add to egg mixture. Chill and freeze.
