Buttery Apple Squares

Ingredients

2 cups plus 2 tablespoons all-purpose flour, divided
1 teaspoon salt
2/3 cup plus 1 tablespoon butter, chilled, divided
1 egg yolk
1/2 cup milk
5 medium Rome Beauty apples, peeled, thinly sliced (5 cups)
3/4 cup sugar
1 teaspoon cinnamon
1 egg white, slightly beaten

Vanilla Frosting:
1/2 cup powdered sugar
2 tablespoons light cream or milk
1/2 teaspoon vanilla extract

Directions:

Preheat oven to 375°. Sift 2 cups flour and salt into bowl. Cut in 2/3 cup butter till mixture resembles large peas. Add a mixture of the egg yolk and milk, mixing just till moistened. Divide dough into 2 equal portions, and pat one of the portions over the bottom of a greased 7x10-inch baking pan. Spread apples in prepared pan.

Mix remaining 2 tablespoons flour, sugar, and cinnamon in a small bowl. Sprinkle over apples and dot with remaining 1 tablespoon butter. Roll remaining dough on a lightly floured surface. Place it over the apples; seal edges, and cut vents. Brush lightly with egg white. Bake at 375° for 1 hour or till crust is light brown and apples are tender.

For Vanilla Frosting:
Combine all ingredients in bowl, and mix well. Spread over warm apple dessert. Cut into squares to serve.
