Moca Java Bars

Ingredients

Bottom Layer:
1 1/4 cups all-purpose flour
1 teaspoon sugar
1 teaspoon baking powder
dash of salt
1 1/4 sticks butter
2 tablespoons strong coffee, cold
1 egg yolk
1 (12-ounce) package semi-sweet chocolate chips

Top Layer:
1 stick butter, softened
1 cup sugar
1 tablespoon vanilla extract
2 eggs plus 1 egg whites
2 tablespoons strong coffee
1 cup chopped nuts
powdered sugar for dusting

Directions:

For Bottom Layer:
Preheat oven to 350°. Lightly grease a 10x15-inch jellyroll pan. Combine flour, sugar, baking powder, and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. In a small bowl, mix coffee and egg yolk, blending well. Stir into flour mixture and moisten to form dough. Press onto bottom of pan. Bake 10 minutes. Remove, and sprinkle chocolate chips over top; return to oven for 2 minutes. Remove, and evenly spread chocolate with a spatula. Allow to stand several minutes.

For Top Layer:
Cream butter, sugar, and vanilla. Beat in eggs and egg white, one at a time. Add coffee (mixture will appear slightly curdled). Stir in nuts, and spread over Bottom Layer. Return to oven, and bake 20–25 minutes, or until top is brown. Remove, and dust with powdered sugar. Cool in pan, and cut into bars.
