In a small saucepan, melt butter over low heat. Remove from heat, and add 1 cup vanilla chips; do not stir.
In a mixing bowl, beat eggs, and gradually add sugar until blended; stir in vanilla chip mixture. Add flour, salt, and extract, and stir well. Spread 1/2 of batter in a greased and floured 8x8-inch baking pan. Bake at 325° for 20 minutes.
In a small saucepan, melt jam over low heat, then spread evenly over baked mixture. Top with remaining batter, remaining vanilla chips, coconut, and almonds. Bake at 325° for 20–25 minutes or until light brown. Allow to cool before cutting into squares.
Almond extract is such a delightful flavor enhancer— especially to chocolate and cherry. Try subbing it or adding it to the more popularly used vanilla when you feel adventurous.
