Preheat oven to 350°. Combine butter, salt, powdered sugar, and 2 cups flour in a bowl, mixing to make a soft dough. Press evenly into an ungreased 9x13-inch baking pan. Bake for 15–20 minutes or until golden.
Combine eggs, lime peel, lime juice, sugar, and remaining 1/4 cup flour in a bowl; blend until smooth. Spoon over crust. Sprinkle coconut over lime mixture. Reduce oven temperature to 325°. Bake for 25 minutes or until firm. Cool. Cut into bars.
