Ever Moist Coconut Pound Cake

Ingredients

2 sticks butter, softened
1/2 cup shortening
3 cups sugar
5 eggs
3 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup milk
2 teaspoons coconut extract
1 (7-ounce) bag flaked coconut

Syrup Topping:
2/3 cup sugar
1/3 cup water
1 teaspoon coconut extract
2 teaspoons butter

Directions:

Beat butter and shortening together; add sugar, and beat until mixed. Add eggs one at a time; beat until fluffy. Mix dry ingredients together, and add alternately with milk, ending with flour mixture; beat well. Add flavoring and coconut. Pour into greased 10-inch tube pan, and bake at 350° for 75 minutes, or until straw comes out clean.

For Syrup Topping:
Boil sugar, water, flavoring, and butter for 1 minute. Immediately pour boiling syrup onto cake upon removing from oven. Let sit 10 minutes before removing from pan. Wrap cake with plastic wrap while still hot.
