Melt butter and mix together with next 4 ingredients, until crumbly. Pat firmly into pan. Peel and slice 6–8 freestone peaches; put on top of crust. Mix and sprinkle the cinnamon sugar over the top.
Bake 15–20 minutes at 350°. Mix the whipping cream and egg yolks and pour over all. Bake 30 minutes more. Cool and serve with ice cream. (Double for a larger group.)
