Wrap zucchini in paper towels; press out as much liquid as possible. Combine zucchini, onion, parsley, cheese, soft bread crumbs, salt, pepper and eggs. Shape into patties; dip into dry bread crumbs. Place on greased baking sheets; drizzle with butter. Bake at 350 degrees for 30 to 40 minutes, until golden.
Tip: Brand new terra cotta pots make super summer serving dishes. Line with a tea towel, napkin or bandanna and fill with fresh veggies, rolls, bread sticks, straws or silverware.
