In a medium glass bowl, combine yogurt, lemon juice, garlic, cumin and coriander mix well. Add pork cover and refrigerate for 6 hours or overnight. Alternate pork, onions, tomatoes and peppers on eight skewers. Grill over medium heat for about 30-35 minutes or until meat reaches desired doneness. Diabetic Exchanges: One serving (prepared with low-fat yogurt) equals 4 lean meat, 2 vegetable, 1/2 fat also, 299 calories, 87 mg sodium, 94 mg cholesterol, 8 gm carbohydrate, 31 gm protein, 7 gm fat.
