Cut stems from artichokes. Remove hairy middle. Snip off ends of petals. Cut four square pieces of heavy duty foil.
Combine bread crumbs and parmesan cheese. In a bowl, open up each artichoke petal and fill it with the crumb mixture. Drizzle olive oil over artichokes until they are really soaked. Season with salt to taste. Place one artichoke in the center of one foil square, twist sides up and seal at top. Repeat with remaining artichokes.
Place foil-wrapped artichokes in pressure cooker on a rack. Add 1 cup water to cooker. Lock lid and bring to full pressure. Cook for 30 minutes, reducing heat to maintain pressure. Quick-release pressure. Serve artichokes with shredded mozzarella cheese or freeze until needed.
