Yield: 6 to 8 pancakes
1. Place the tofu, water, and vanilla in a blender and blend until smooth and creamy.
2. Combine the flour, baking powder, and cinnamon in a large bowl. Add the blended tofu and mix well. Add the grated apple and raisins, and mix to form a thick batter.
3. Heat a little of the coconut oil in a large nonstick skillet over medium heat. Drop the batter in 1/4-cup amounts onto the skillet. With the back of a spoon, spread out the batter as much as you can. Cook 1 to 2 minutes or until brown on the bottom. Turn over and brown the other side. Serve hot.
