1. Rinse the millet, cover with water, and soak 8 hours or overnight. Drain.
2. Place the millet in a medium pot along with the water, dates, and vanilla (if using) over mediumhigh heat. Cover and bring to a boil. Reduce the heat to low and simmer about 20 minutes or until the water is absorbed. Serve hot.
For a Change . . .
* Reduce the millet amount to 1/4 cup and add 1/4 cup quinoa. (You can soak the quinoa and millet together.)
