1. With a serrated knife, cut the loaf in half lengthwise. Discard the top half or reserve it for another use. Cut the bottom half into quarters. Next, score each quarter into thirds, cutting down to (but not all the way through) the bottom crust.
2. Reassemble the quarters on a baking sheet. Cover the top with sauce, then sprinkle with mozzarella.
3. Add your choice of toppings.
4. Bake in a preheated 400°F oven for 20 minutes, or until the cheese is melted. Separate the quarters with a spatula, then cut or break them apart where scored. Transfer the mini pizzas to a platter and serve.
