1. Cook sausage in skillet until browned. Drain on paper towels.
2. Wipe out skillet. Heat olive oil in skillet and add vegetables. Stir fry for a couple minutes until slightly tender.
3. Arrange bread slices in 13x9-inch baking dish that has been sprayed with cooking spray.
4. Layer cheese, sausage and vegetables over bread.
5. In large bowl, combine all remaining ingredients; beat well. Pour egg mixture evenly over bread.
6. Refrigerate overnight.
7. Bake at 350°. for 50 minutes or until knife inserted in center comes out clean.
