1. Halve muffins and toast.
2. Spray large skillet with cooking spray and heat over medium heat. Add eggs, one at a time. Salt and pepper to taste. Cook for about 2 minutes. Flip and cook until yolk is set.
3. Spread a teaspoon of preserves on 6 muffin halves. Place cheese on other 6 halves. Top cheese with an egg and other half of muffin.
