1. Heat oil in a large skillet over medium heat.
2. Add green peppers and onions and cook for about two minutes until softened.
3. Stir in potatoes and seasonings. Cover and cook for about 10 minutes or until bottom of potatoes are browned.
4. Sprinkle with cheese and continue cooking until cheese is melted.
