1. Heat oven to 350°.
2. Heat olive oil in medium skillet. Add ham, green peppers, onions and asparagus and stir-fry for 3 minutes.
3. Spoon into 2-quart baking dish that has been coated with cooking spray and stir in mushrooms.
4. Whisk together eggs, milk, salt and pepper. Stir in cheese and pour over vegetables. Stir gently.
5. Bake for 50 minutes or until knife inserted in center comes out clean.
