Shrimp-Stuffed Tomato Poppers

Ingredients

2 pints cherry tomatoes
1/2 pound cooked shrimp, peeled and finely chopped
1 (8-ounce) package cream cheese, softened
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
2 teaspoons prepared horseradish
1 teaspoon lemon juice
1 salt and pepper to taste
1 Garnish: chopped fresh parsley

Directions:

Cut a thin slice off the top of each tomato; scoop out and discard pulp. Place tomatoes upside-down on a paper towel; let drain for 30 minutes. Combine remaining ingredients except parsley; blend until smooth. Spoon into tomatoes; sprinkle with parsley.
