Combine vegetables and salt and let sit overnight. In morning, rinse vegetables and drain. Combine remaining ingredients and pour over vegetables. Bring to a boil. Simmer 3 minutes, stirring frequently. Pack into hot sterilized pint jars and process in boiling water 10 minutes.
