Peanut-Glazed Rock Cornish Hens

Ingredients

4 Rock Cornish hens (3/4 to 1 pound each)
1/2 cup chunky peanut butter
1/4 cup dry white wine or chicken broth
2 tablespoons honey
1 tablespoon soy sauce
1/4 teaspoon ground red pepper flakes
4 medium green onions, finely chopped (1/4 cup)
1/2 cup dry roasted peanuts

Directions:

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Cut each hen in half along backbone and breastbone from tail to neck, using kitchen scissors. Mix remaining ingredients except peanuts.
Cover and grill hens, skin sides down, 15 minutes. Turn hens brush with peanut butter mixture. Cover and grill 20 to 40 minutes longer or until thermometer reads 180° and juice is no longer pink when center of thigh is cut. Top hens with peanuts.
