Combine potatoes, ham and onion in a greased one-quart casserole dish; set aside. Melt butter in a saucepan over medium heat; stir in flour until smooth. Gradually add milk, stirring constantly until thickened and bubbly. Add cheese, salt and pepper; stir until cheese melts. Pour over potato mixture; stir gently to combine. Bake, uncovered, at 350 degrees for 35 to 40 minutes, until bubbly. Sprinkle with parsley, if desired.
Tip: Even if you're dining alone, set the table for a very important person…you! Use your prettiest tableware and a crisp cloth napkin. Treat yourself to a fresh flower in a bud vase too. Relax and enjoy!
