Mix together flour, salt and pepper; coat pork chops in mixture and set aside. Whisk together egg and milk; dip chops into egg mixture, then into bread crumbs. Heat shortening in a skillet over medium heat. Add chops and cook for 3 minutes on each side until golden. Add broth; lower heat, cover and simmer about 45 minutes, or until tender. Uncover for last 5 minutes of cooking time.
Tip: Topped with gravy, chili or just creamy butter, baked potatoes are a meal in themselves! Cut baking time in half…microwave potatoes on high for 4 minutes on each side, then bake at 450 degrees for 20 minutes, until tender.
