Pour boiling water over salted meal, stir quickly and cover with a close fitting lid for 2 or 3 minutes. Add melted fat, stir, then add enough cold water to make soft dough.
Dough must be firm enough that it can be shaped into individual pones the size of a biscuit. Do not pat too firm as this will make the pone crack when baked. Place the pones on a well greased pan and bake 10 minutes in 400° oven then reduce heat to 350° for 35 minutes. Serve with butter. Never cut corn pones-break into bite size to eat.
