Peel and slice potatoes into 1/8-inch slices drop into cold water. Peel and slice onion. Butter 2-quart casserole. Drain and pat potatoes dry with paper towel. Divide ingredients into fourths. In following order, layer potatoes, season with salt and pepper, add onion, sprinkle with flour, and dot with butter (or margarine). Repeat this layering three times. Pour milk over potatoes. Sprinkle with paprika. Bake, covered, at 350 degrees F. for 45 minutes remove lid and continue baking another 45 minutes or until potatoes are tender and lightly browned.
Note: Scalloped potatoes can have any of the following added: corned beef, meat loaf, diced ham, sausage, or sliced frankfurters. Vegetables such as carrots, broccoli, turnips, cauliflower, green tomatoes, or seeded red tomatoes can also be added.
Variation
Potatoes au Gratin: Using 2 cups shredded cheese, layer cheese along with other ingredients, finishing off with cheese.
