Mix strawberries with sugar. Cook rapidly until thick (about 20 minutes). Stir to be sure that the berries do not burn. Add lemon juice a few minutes before cooking is completed.
Pour into sterilized jars and seal with paraffin. The paraffin is melted over low heat. Pour a thin layer over jam and slightly rotate the glass so that the paraffin will stick to the glass above the surface of the jam, then place a clean, dry lid on the glass and store in a cool, dry place.
