For sauce, combine sugar, water and corn syrup and cook to soft ball stage (236°). Remove from heat. Add chocolate and stir until melted. Add vanilla, then slowly add evaporated milk and mix thoroughly. Cool. This makes 1 3/4 cups sauce.
To serve, put a slice or 2 scoops of sherbet on each plate. Over this, drizzle chocolate sauce, sprinkle with toasted coconut and then toasted almonds.
