Mascarpone With Fruit

Ingredients

Mixture of fresh fruit, peeled and sliced, as
1 (6-ounce) can frozen limeade concentrate
1 (11-ounce) package cream cheese at room temperature
1/3 cup powdered sugar sifted
2 tablespoons half and half
3 tablespoons orange liqueur
1 tablespoon orange juice concentrate thawed
1 tablespoon orange rind grated

Directions:

Prepare fruit, such as sliced peaches, apricots, pears, strawberries, melon slices, blueberries and oranges. Marinate in limeade (to keep from discoloring) a couple of hours before serving time. If canned fruit is used, place canned halves of peaches, apricots, pears and pineapple in skillet with a little juice and sugar and sauté until glazed. Chill before serving.

In food processor or blender, blend together all other ingredients until smooth (should be consistency of sherbet). Arrange cream in the center of a serving plate and swirl into an attractive pattern. Surround with the drained fruit.
