Lentil Soup, Gypsy Style


Serves: 8

Ingredients

1 cup lentils
5 cups water
1 (15-ounce) can tomato sauce
1 cup carrot, finely diced
1/2 cup onion chopped
1 1/2 cups ham cubed
1 1/2 teaspoons salt
1/2 teaspoon marjoram
1/2 cup sour cream dairy (optional)
1/2 teaspoon nutmeg (optional)

Directions:

Combine all ingredients except sour cream and nutmeg in 3-quart kettle. Bring to boil reduce heat and simmer, covered, about 2 hours or until lentils are very tender. Top each serving with dollop of sour cream and sprinkling of nutmeg, if desired.
