2 tablespoons butter
1 pound orange roughy fillets, thawed
1/2 teaspoon dill weed
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons bread crumbs
2 teaspoons butter melted
Preheat oven to 450 degrees F. Melt butter (or margarine) in shallow baking dish. Place fish in melted butter, turning to coat; sprinkle with dill weed, lemon juice, and salt and pepper. Bake for 15 to 20 minutes, or till fish flakes easily with fork. Sprinkle lightly with buttered bread crumbs during last 3 minutes of baking.
Note: Any white-fleshed, mild-flavored fish, such as haddock, sole, or whitefish, may be substituted for orange roughy.
