Oriental Fish Fillets

Ingredients

1 pound fish filet, kipper snack thick firm such as shark, swordfish, halibut, or snapper
1 (8-ounce) can pineapple chunk in own juice
water
3 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon cider vinegar
2 teaspoons cornstarch
3 tablespoons vegetable oil
1 green bell pepper large, cut in 1-inch pieces
1 onion small, cut in wedges

Directions:

Pat fish dry with paper towel. Cut in 1-inch cubes.

Drain juice from pineapple, adding water to juice to measure 2/3 cup. Stir in soy sauce, sugar, vinegar, and cornstarch until smooth set pineapple and cornstarch mixture aside.

In a large skillet over medium heat, stir-fry fish in 2 tablespoons of the hot oil 3 minutes. Remove fish. Add remaining 1 tablespoon oil, green pepper, and onion. Cook and stir 3 minutes. Stir in cornstarch mixture. Stirring, bring to a boil and boil 1 minute until thickened. Gently stir in fish and pineapple. Cook until heated through.


Serve with prepared packaged rice mix, steamed green beans, and Chilled Nectarine Dessert
