Rinse trout with cold water pat dry, inside and out, with paper towel. Wrap two slices bacon around each fish, securing with wooden picks.
Spray cold grill grate with non-stick cooking spray or brush with oil. Place fish on hot grill about 4 inches above medium-hot coals. Cook 6 to 8 minutes on each side until trout flakes easily with a fork, is white and moist, and bacon is done (do not overcook).
Garnish with lemon and parsley.
Serve with grilled potatoes, Marinated Green Beans and Peach 'n' Plum Cobbler
