Cut tenderloin into 1-inch pieces or cut each frank in thirds. Place in a 9-inch pie plate. Pour in 1/4 cup of the soy sauce and 1 tablespoon of the oil, turning meat to coat. Let stand.
In a small bowl, stir mayonnaise, peanut butter, orange juice, and hot pepper sauce until blended set peanut sauce aside.
To assemble kabobs, remove turkey from marinade, discarding marinade. Thread on each skewer one piece of turkey, pineapple, red pepper, green onion, and mushroom repeat, then add a third piece of turkey. Combine remaining 1/4 cup soy sauce and remaining 1 tablespoon oil brush on kabobs.
Spray cold grill grate with non-stick cooking spray or brush with oil. Place kabobs on hot grill about 4 inches above medium-hot coals. Turning and brushing with soy mixture several times, cook 8 to 10 minutes until browned and red pepper is crisp-tender.
Serve with peanut sauce.
*A 15-ounce can of pineapple chunks, drained, can be used.
Serve with ramen noodles and sliced fresh peaches with almond cookies.
