Carrot Salad


Serves: 9

Ingredients

2 cups carrots, shredded
1/4 cup raisins
1 small apple, sliced
1 cup cantaloupe, or other melon, sliced
3 tablespoons orange juice
24 leaves lettuce

Directions:

1. Combine all ingredients except lettuce.

2. Refrigerate for a few hours until the raisins absorb the juice.

3. Divide into 9 parts on salad plates lined with crisp lettuce.

4. Serve cold.
