Beat eggs lightly with oil in a medium bowl. Mix in Featherlight, salt, and xanthan gum. Work it into a firm ball. If dough feels too sticky and wet add more Featherlight mix, 1 tablespoon at a time.
Dust a clean surface with flour. Roll out the dough as thin as possible. Cut into whatever size of pasta you want. Once the pasta is cut, you can cook it or freeze it for later use.
Cook pasta in salted water with 1 tablespoon of oil added for 10 to 15 minutes, depending on how thick your pasta is. Use a taste test to decide when it is done.
