Very carefully trim all visible fat from the steaks and then cut into 1 1/2 inch slices. Toss in a bowl with 1 tablespoon of the oil, soy sauce, sherry, cornstarch, ginger, sugar and scallions. Marinate for one hour.
Trim the ends from the peapods, slice the mushrooms.
In a skillet or wok, heat 9 tablespoons of oil until steaming. Add the flank steak mixture and stir fry for 4-5 minutes. Mix in the oyster sauce and remove to a heated platter.
Heat the remaining oil in the frying pan or wok, add the pea pods and mushrooms and stir fry to 2-3 minutes. Mix in the meat mixture and vegetables and serve.
