Arrange apple slices in greased 2-quart round casserole. Sprinkle cinnamon, lemon and orange rinds and both liqueurs on top of apples. In a separate bowl, mix sugars, flour, salt, and butter with a pastry blender until crumbly. Spread mixture over top of apples. Bake uncovered at 350° until apples are tender and top is lightly browned, approximately one hour. Serve warm with cream, whipped cream, or vanilla or cinnamon ice cream.
Fun Fact: Pikes Peak is a mountain in the Front Range of the Rocky Mountains, 37 miles west of Colorado Springs, Colorado. Katharine Lee Bates was moved to write the words to the famous song "America the Beautiful" in July, 1893, after having traveled to the top of Pikes Peak on a carriage ride.
