Soda Cracker Pie with Berries

Ingredients

14 soda crackers
3 egg whites
1 cup sugar
1 1/2 teaspoons vanilla extract
2 teaspoons praline liqueur (optional)
1/2 cup chopped pecans
1/2 teaspoon baking powder
1 cup heavy cream
3 tablespoons sugar
1 cup fresh raspberries, washed and drained

Directions:

Crush crackers into fine crumbs. Beat egg whites until stiff and fold in sugar. Add vanilla and liqueur. Fold in cracker crumbs, pecans, and baking powder. Bake in a buttered 9-inch glass pie plate. Bake at medium heat or 70% power in microwave oven for 5 minutes. Turn dish and bake another 2 minutes. Turn again and bake 1 1/2 minutes. Pie shell should start to pull away from the sides of the pan. Cool completely.

Whip cream and sweeten. Stir in berries. Spoon into the cooled pie shell. Let stand in refrigerator at least 4 hours before serving.

Note: May substitute boysenberries or strawberries for the raspberries.


Fun Fact: A tailor named Jacob Davis from Reno, Nevada, is credited with inventing what is known today as blue jeans. One of Davis’ customers kept ripping the pockets of the pants that Davis made for him. As a way to strengthen the man’s trousers, Davis put metal rivets at the points of strain, such as on the pocket corners. Since Davis regularly purchased bolts of fabric from a dry goods store in San Francisco operated by Levi Strauss, he offered Strauss a half interest in the invention if Strauss would come up with $68 for the patent. Strauss took him up on his offer, and the two men received a patent on May 20, 1873. When the patent expired 20 years later, dozens of garment manufacturers began to imitate the riveted clothing, which has become the most popular clothing product in the world.
