Classic Italian Bread Salad

Ingredients

DRESSING
1/3 cup olive oil
1/3 cup balsamic vinegar
SALAD
8 thick slices stale country style bread
8 firm ripe tomatoes such as Roma or plum, coarsely chopped
2 unpeeled seedless cucumbers coarsely chopped
8 scallion sliced
1/2 cup slivered fresh basil
salt and cracked pepper to taste

Directions:

1. Dip the bread briefly in cold water, 1 slice at a time. Squeeze out the water, tear the bread into pieces, and place in a medium-sized bowl.

2. Add all of the remaining salad ingredients to the bread, and toss gently to mix.

3. Place the dressing ingredients in a small bowl, and whisk until well mixed.

4. Drizzle the dressing over the salad mixture, toss to combine, and serve immediately.
