Put all ingredients into saucepan, bring to a boil, turn heat to medium, and continue cooking until pineapple turns a clear golden yellow. Pour fruit and syrup into hot, sterilized glass jars and seal. Let jars “ripen” about 2 weeks so fruit will absorb spices.
