Slice peppers down center of one side lengthwise to open up; run under water, removing seeds. Combine prepared stuffing and sausage in a large bowl; add onion and zucchini. Stir in eggs and brown sugar; mix well. Spoon into peppers; arrange peppers in a lightly greased 13"x9" baking pan. Bake, uncovered, at 350 degrees for 1-1/2 hours. Sprinkle with cheese; bake for an additional 10 minutes, or until cheese is melted.
Tip: When making any dish with hot peppers as an ingredient, it’s always a good idea to wear a pair of plastic gloves to protect your skin while cutting, slicing or chopping the peppers. Just toss away the gloves when preparation is all done.
