Wash pumpkin seeds, removing any attached fibers. Soak seeds in salted water for 4 hours; drain.
Preheat oven to 350°. Place seeds and oil in a zipper bag, and seal. Rub bag to coat seeds. Bake seeds on jellyroll pan about 15 minutes, stirring occasionally. In another zipper bag, combine salt, curry powder, and cheese; add seeds and toss to coat evenly. Bake about 10 minutes longer, until crisp.
