Heat oven to 400 degrees. Place 3 tortillas on large ungreased cookie sheet. Bake 5 minutes. Beat peanut butter, soy sauce, vinegar, sugar, using wire whisk, until smooth spread over tortillas. Sprinkle 1/4 cup of the cheese over each tortilla. Spread chicken and vegetables evenly over tortillas. Sprinkle with remaining 1 1/2 cups cheese. Bake 10 to 15 minutes or until pizzas are hot and cheese is melted. Repeat with remaining tortillas.

Purchased peanut sauce, found in the Asian-foods section of your grocery store, can be used in place of the peanut butter, soy sauce, vinegar, and sugar. Use a scant 1 cup of purchased sauce.
