Mattie Lou’s Prune Cake

Ingredients

2 cups sugar
2 cups self-rising flour
1 tablespoon cake spice
3 eggs, beaten
1 cup oil
4 (2-1/2 ounce) jars prune baby food
1 teaspoon vanilla extract
Optional: 3/4 cup chopped pecans

Directions:

Mix sugar, flour and cake spice together in a large bowl. Blend in eggs, oil, prunes and vanilla; mix thoroughly. Stir in pecans, if desired. Pour batter into a greased and floured tube pan. Bake at 350 degrees for approximately one hour, until a toothpick inserted in center comes out clean. Let cool on wire rack.


Making some surprise balls to unwrap on Christmas Eve helps everyone settle in before the big morning. Wrap crepe paper ’round -and-’round little toys and candies until the paper forms a ball. Everyone will love unwinding the paper until the surprise is found inside!
