Blend together all ingredients except pie crust and whipped cream in a medium bowl. Pour into pie crust and bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and continue to bake an additional 30 to 35 minutes. Filling should be set slightly more around the edges than in the center. Serve plain or with whipped cream, if desired.
Beginning in early December, mix up batches of cookie dough and pop in the freezer. Jot down the baking directions on a mailing tag and tie to the freezer bag. Later in December, when it’s time to bake cookies, just remove from the freezer and bake.
