1. Mix eggs in bowl then season with salt and pepper. Add milk as desired.
2. Butter pan, then sauté onions until soft on a medium heat. Add diced tomatoes (and potatoes if you choose), then eggs.
3. Add avocado and cheddar cheese when eggs are almost fully cooked.
4. Remove from heat when cheese is melted on the frittata. Serve open faced.
