Heat oven to 350° F. Grease a 9 x 13-inch baking pan. Sauté sausage in a large skillet. Discard grease spoon meat into baking pan in one layer. Cover with drained chilies. Mix flour, cheese, salt, pepper, and onion together. Beat in eggs and milk. Spoon over sausage-chili mixture. Dust with paprika. Bake for 45 minutes or until top is lightly browned and knife inserted in center comes out clean. Remove from oven and cool. Serve warm or at room temperature.
