* In a Dutch oven sauté onion in butter until golden. Add the beef and stir until fine. Add all of the chopped vegetables, the chicken, and the ham. Add the tomatoes, liquids, and seasonings. Stir until mixture comes to a boil. Reduce heat and simmer uncovered for 1 hour adding more tomato juice if it seems too dry.
Cook 1 pound vermicelli spaghetti in boiling, salted water. Arrange cooked spaghetti in a hot buttered serving casserole, dot with butter, sprinkle with 2 tablespoons Parmesan cheese and 1/4 pound mozzarella shredded cheese. Pour the hot meat sauce over the top and serve with additional Parmesan cheese.
